Education Series – Theobromas
This second set of bars in our Education Series is about Theobroma species. Did you know that cacao is not the only type of Theobroma tree species? It is just the most widespread because it is the one the Spanish liked the most as they colonized the central and south Americas.
This set introduces you to another Theobroma species: Bicolor. It is also known as mocambo, jaguar, balamte and pataxte. It has a milder, nuttier flavour very unlike its cousin, the cacao. Here, we invite you to try the two cousins side-by-side with a Peruvian 70% cacao bar and a Mexican 80% bicolor bar (don’t let the percentage sway you, it doesn’t taste like dark cacao!)
