A celebration of spring. This is a rice dark “milk” bar in a Pangoa Peru cacao base. Then we blend in special matcha from Shizuoka, Japan that has been ground with cherry blossom (sakura) leaves. Each bar then has preserved cherry blossoms inlaid by hand for a bar that is both art for your eyes and for your mouth. Flavour notes are complex for a lighter bar, including floral, matcha grassy and Peruvian fruity brightened with the salt of the preserved cherry blossoms. I hope this lights your spirits as the days get lighter through spring!
